Moist apple and carob cake

Ingredients

  • 4 eggs
  • 1/2 cup sugar (100 g)
  • 1/2 cup milk (1 dcl)
  • 1/2 cup oil (1 dcl)
  • 1 cup flour (130 g)
  • 1 cup ground carob (130 g)
  • 2 packets of vanilla sugar
  • 1 baking powder
  • 3 large or 4 small apples
  • 100 g raisins (optional; can be left out)
  • Chocolate glaze (optional):
  • 150 g dark chocolate
  • 6 tbsp oil

Instructions

Beat the eggs with the sugar and vanilla sugar. Add the flour mixed with baking powder, ground carob, milk, and oil, and mix well using an electric mixer.

Grate the apples into the mixture, add raisins if desired, mix everything well, and pour into a baking dish approximately 20 x 30 cm.

Bake for 30 minutes at 180°C (350°F).

Once the cake has cooled, you can optionally add a chocolate glaze. Melt 150 g of dark chocolate and 6 tablespoons of oil in a heatproof bowl set over a pan of simmering water. Let it cool slightly, then pour over the cake.
